Baked Potato with Cheesy Garlic Dip

BAKED POTATO WITH CHEESY GARLIC DIP
Baked Potato is one of the most simplest yet tasty starter to make. Potato lovers will enjoy this! Served with a cheesy garlic dip completes the dish and adds tons of flavor to it.

INGREDIENTS:
  1. Baked Potatoes
  2. Black Pepper
  3. Salt
  4. Chilly Powder
  5. Cheese
  6. Butter
  7. Garlic Cloves
  8. Curd
  9. Vegetable Oil
  10. Lemon
METHOD:
  • Preheat the oven to 200C. Meanwhile, take a baking potato (alternatively you can use regular large size potato) and wash it with its outer cover on. Grease some oil over the outer skin of the baking potato and wrap it in an aluminium foil.
  • Place the wrapped potato in the baking oven and bake for approximately 45 mins to 1 hour at 200C. (After 45 mins, you can remove and check it with a knife that whether its cooked properly or not)
  • Remove the foil from over the potato and slice the topmost layer of the potato (As if you have opened the top cover). Now, with the help of spoon scoop out the cooked potato and place it in a bowl.
  • Add black pepper, chilly powder, salt and grated cheese in the bowl which contains the scooped out potato. Mix well and the filling is ready. 
  • Add this filling back in the cooked potato. Use a fork to layer the topmost part evenly and add melted butter (or ghee) over it along with black pepper and chill powder.
  • Now, first place the sliced potato and over that the prepared potato and bake it at 200C for half an hour.
  • CHEESY GARLIC DIP - Take a bowl and add thick curd, two medium sized garlic cloves which are grated, one large cheese block, black pepper and salt. Mix them well in a mixer. Take out the dip and refrigerate it overnight. The dip is ready to eat.
  • The baked potatoes are now ready to eat. Serve it with cheesy garlic dip and a slice of lemon.

Cabbage Salad

CABBAGE SALAD

Salads are the most refreshing and healthy dish that can be served with any meal or on the go. Cabbage salad is one such a way to make your day refreshing. It is quick and easy to make.

INGREDIENTS:
  1. Green Cabbage
  2. Red Cabbage
  3. Carrot
  4. Onion
  5. Cucumber
  6. Vinegar
  7. Spices (Salt, Black pepper powder, Black salt powder)
METHOD:
  • Finely dice the red and green cabbage. Chop carrot and cucumber vertically thin. Chop onions to make onion rings.
  • Take a bowl and add chopped green cabbage, red cabbage and carrot. Sprinkle salt and leave it aside for few minutes.
  • Now, add chopped cucumber and onion rings. Sprinkle some black pepper powder and black salt powder as per taste.
  • Add a spoon of vinegar to it.
  • Mix really well and the salad is ready to serve.

Pav Bhaji

PAV BHAJI

Pav Bhaji is one of the most popular dishes in Mumbai. It tastes delicious and is very simple to make. It is a quick meal that can be grabbed on the go. Large quantity of bhaji can be made in advance and just reheated before serving with a toasted PAV!!

INGREDIENTS:
  1. Potato
  2. Carrot
  3. Green Beans
  4. Red Capsicum
  5. Yellow Capsicum
  6. Cauliflower
  7. Peas
  8. Spinach
  9. Tomato
  10. Onion
  11. Green chilly
  12. Ginger
  13. Lemon
  14. Butter
  15. Cooking oil
  16. Pav Bread
  17. Coriander Leaves
  18. Spices (Salt, Turmeric powder, Coriander powder, Chilli powder, Dry Mango powder, Pav Bhaji Masala)
METHOD:
  • Chop all the veggies (from ingredient no 1 to 8) and boil them in the cooker. 
Chopped Veggies
  • Chop tomato, ginger and green chillies. Grind them in a mixer to make a puree.
  • Take a pot and add some cooking oil in it. Once heated, add the puree to it and let it cook for some time. As oil starts separating from the cooked puree as shown then add all the boiled vegetables to it. (Make sure you mash the boiled vegetables)
Cooked Tomato Puree
  • Add all the spices as mentioned in the pot as per your taste and stir well. Close the lid of pot and let it cook for some time. Once cooked, sprinkle another round of Pav Bhaji masala and garnish some coriander leaves over it. The "bhaji" is ready to eat.
Cooked Bhaji
  • Heat a tava and some butter over it. Slit the pavs vertically open and place it on tava. Cook on both sides so that they become crisp. Add more butter if required.
  • Pav Bhaji is ready to eat. Serve it with lemon, green chilly and chopped onions.

Apple, Pear, Sweet Potato & Pumpkin Puree


APPLE, PEAR, SWEET POTATO & PUMPKIN PUREE

Apple and pear are usually the first foods for baby and are easy to digest. When added with veggies such as sweet potato and pumpkin they become healthy and delicious. 

INGREDIENTS:
  1. Apple
  2. Pear
  3. Sweet Potato
  4. Pumpkin
METHOD:
  • Peel, core and cut all the ingredients into small pieces.
Chopped fruits & veggies
  • Steam the fruits and veggies by adding little water. I have used a steamer for this.
  • Once steamed, mash all of them in mixer to make a smooth puree. It's ready to eat.

Instant Oats Dosa

OATS DOSA

Oats Dosa is a very simple to make healthy dish for breakfast. It can be made instantly anytime for kids and they will definately love it. The best part of this dish is that it has all the ingredients that we usually have at home readily.

INGREDIENTS:
  1. Powdered Oats - 1 cup
  2. Whole wheat flour (Aata) - 1/4 cup
  3. Rice flour - 1/4 cup
  4. Besan - 1 Tablespoon
  5. Curd - 1 Tablespoon
  6. Salt
  7. Chopped onions
  8. Cooking oil
METHOD:
  • Mix all the ingredients together with little of water such that the consistency is that of Dosa batter.
Oats Dosa batter
  • Pour out the batter on heated tava. Drizzle oil and cook well on both sides.
  • It's ready to eat. Serve with tomato ketchup.

Pasta In Red Sauce


PASTA IN RED SAUCE

Pasta is one of those dishes which is loved by everyone. It's a perfect dish for brunch or a special breakfast. There can be many variants of making pasta. I have tried to make it in a very simple way.

INGREDIENTS:
  1. Pasta
  2. Onion
  3. Carrot
  4. Green capsicum
  5. Red capsicum
  6. Yellow capsicum
  7. Tomato
  8. Salt
  9. Pepper
  10. Chilly powder
  11. Tomato sauce
  12. Cheese Slices
  13. Butter
  14. Cooking oil
METHOD:
  • Add water to a pot and bring it to boiling state. Once water is boiled, put all pasta in the pot. Add a pinch of salt and a spoon of cooking oil in it to avoid from getting sticky.
  • After the pasta is boiled, drain it through cold water and keep it aside.
Boiled Pasta and chopped veggies
  • Take a heated pan and add butter to it. Add chopped onions and fry them till they are brown. Then add carrots and all types of capsicum. Once cooked, add chopped tomatoes and let it cook.
  • Sprinkle chilly powder and pepper and stir it. Now, add all the pasta into it. 
Cooked Pasta
  • Add salt as per taste and mix well. Add loads and loads of tomato sauce. Mix it really well. Keep it in flame for 2 mins and it's ready to eat. Serve with toasted breads and a layer of cheese over it.

Introducing ME...

Hello!! Welcome!! My name is Ruhee otherwise known as 'too lazy to enter the kitchen for cooking'. Born and brought up in Mumbai, India. I have lived across many places such as Mumbai, Pune, and Noida in India and Bangkok in Thailand. Currently I live in London, United Kingdom. I am a software engineer by profession and have always been in a job. While I should not forget to mention that being in job really meant going early to office and coming late back home where kitchen was just a room to fill your stomach as soon as possible.

Okay!! Let me admit it now!! I don't really love cooking. I cook because I have to. But trust me I don't really hate it too. It's so simple. If the dish I have cooked, turns out to be yum, I suddenly fall in love with cooking and if it is the other way, I would never go back to kitchen. Apparently, the next meal would definitely be in a favourite restaurant and very next to it will have to be cooked by my loving husband. He definitely loves to cook.

Then, why this blog? Why do I say "A whole new world in kitchen..."?? This blog celebrates motherhood. A mother of a wonderful daughter who loves to eat makes me explore a whole new world in the kitchen with simple pleasures of cooking. It would encapsulate the most simplest dishes we make everyday along with some really special menus on the chart. The whole intention behind this blog is to surprise myself after many years thinking that even I cooked!!
